The U.S. eats more than 1.7 billion pounds of bacon every year –much of that in the Southeast, making Winn-Dixie and BI-LO stores one of the top retailers in bacon sales.

Bi-Lo Holdings launched a campaign this month in an effort to raise consumer awareness of bacon and to work toward making BI-LO and Winn-Dixie the bacon destination of the region. To mark this effort, a contest and challenge was opened to all associates asking them for their best bacon-inspired recipe. The winning recipe was to contain bacon and at least one Winn-Dixie or Southern Home product.

A panel of judges, including a Winn-Dixie chef, chose the top five recipes based on the ingredients and cooking style.On Jan. 7, the final five recipes were judged and a winner was chosen based on best flavor and most creative use of bacon in a recipe.

Rob Beaty, assistant store director of BI-LO store No. 5410 in Mt. Pleasant, S.C., won a $100 BI-LO gift card for his Southern Home sweet and spicy bacon chicken.

“We stumbled across the recipe by accident,” Beaty said. “But that was the one that came to mind when I saw the contest. When we serve it to guests, everyone loves it. People go back for seconds, for sure. Bacon should be its own food group.”


4 Southern Home Boneless Skinless Chicken Breasts cut in thirds lengthwise (12 pieces)
12 slices Southern Home Thick Sliced Bacon

Southern Home Garlic Powder to taste

Southern Home Chili Powder to taste

Southern Home Salt & Pepper to taste

Southern Home Light Brown Sugar- 1 or 2 cups

Southern Home Extra Virgin Olive Oil- 2 or 3 tablespoons

Pre-heat oven to 400 degrees.
Cut breasts into 3 pieces each, season to taste with garlic powder chili powder, salt & pepper.
Wrap each chicken strip with bacon and roll in the brown sugar.
Place in baking dish coated with olive oil.
Bake @ 400 degrees until chicken is cooked through and bacon is brown & crispy (approximately 30 minutes.)
Serve with your favorite vegetable and mashed potatoes. The pan drippings make excellent gravy for the potatoes.
Special Note: These can also be grilled over indirect heat until chicken is cooked through then over the coals to crisp up the bacon (my favorite method)
